The trick is to let the grape ripen on the cane as long as possible. Part of the late harvest is immediately processed into wine in the cellar, another part of the harvest is put to dry on special mats. The dried and particularly concentrated grapes are added later to the wine that has already been fermented. This results in a second fermentation, after which the wine matures for six months in oak barrels and is then placed in bottle for a few months.


This age-old method results in a powerful and concentrated wine. Sensationally rich and velvety in taste with fruit tones that are more vivid than the wines made entirely from dried grapes. Luca Maroni takes his hat off. And we do that too. With a deep bow.
